Manuel grew up inside a family of Spanish chocolatiers, raised among tempering machines, cocoa aromas and one non-negotiable principle: "el mejor chocolate del món." Years training in the family workshop and alongside some of Spain's most respected makers gave him a trained palate and a clear standard for what a real pastry ingredient should taste like. Once in the US, he saw the same gap over and over: home bakers couldn't get the European brands professionals rely on — at least not in usable sizes, at fair prices, or without an importer in between.

Fernando spent years travelling the pastry capitals of Europe, working hands-on with the producers behind some of the continent's most respected ingredients — Spanish and European workshops crafting hazelnut and pistachio spreads, ripples and pastes. That experience built two things: a sharp eye for what truly separates a great ingredient from a merely good one, and the direct relationships with the makers themselves. Exactly the relationships needed to bring those products into the US the right way.
