Why Is My Cake Dry and How Can I Prevent It?

Short answer

The most common cause is over-baking: even three extra minutes can push the crumb past its moisture point. After that, over-mixing (which develops gluten and tightens the crumb), too little fat or sugar, and storing the cake uncovered or refrigerated. Bake to internal temperature, mix only to combination, and add invert sugar or a soaking syrup to hold moisture for days.
